The latest investment in order to create the complete production
chain is the meat factory with cutting room.
The factory in Via Poggio alla Terra 18, was opened in 2006,
and is a modern and dynamic structure turning fresh Cinto Toscano
meat into cuts for butchers’ counters and traditional
Tuscan cold meats rendered unique in taste and quality by the
exclusive recipe of traditional herbs and spices. The meats
are cured in dedicated cells and stored in pieces or vacuum-packed
slices until the moment of sale. Poderi Tognetti’s range of delicatessen products
made from Cinto toscano includes legs of ham
cured at least 12 months, the rustic salami of Montaione, delicate
finocchiona sausage (with fennel seeds), fresh
and cured sausages, lard, bacon, capocollo,
blood pudding, soppressata (similar to brawn).
A part of the fresh meat is also used to prepare traditional
sauces and specialities conserved in jars.
