mill which while being highly innovative is also respectful
of typical Tuscan tradition.
The production system is designed to preserve everything
good which comes from past tradition, the fruit of passion
and love for the land, while also introducing new techniques

Today appreciated
mainly in cooking and in the sphere of homeopathic medicine,
Saffron is rich in vitamins B1 and
B2 and has excellent pharmaceutical properties thanks
to the high content of carotenoids, antioxidants considered
important for their effect on free radicals.
Saffron was already being grown throughout the area
around San Gimignano and the Florentine
hills in the middle ages for varied purposes;
it was used by the wealthy to give their clothes a nice
yellow colour, as a pigment for works of art, and not
least as a means of barter.
