One of the most exciting projects involving the whole
Tognetti family has been breeding the
"Cinta Senese".
The 90 hectares of forest of the Sapito farm
was the perfect place for integrated organic breeding.
The forest was divided into two large enclosures of 45
hectares each which are alternated so as to maintain the
natural equilibrium of the forest. Animals are left free
within the enclosures, divided according to age groups.
The farm is a closed-cycle, in a semi-wild state, currently
consisting of approximately 800 heads of suckling and
breeding animals.
In addition to the natural diet of undergrowth consisting
of acorns, chestnuts and tubers, diet supplements have
been careful studied in research conducted by the University
of Florence to create
